Friday's Fish aka grazing tends to be expensive

As a rule I do not cook dinner on Fridays, of course we eat.
In stead of a dinner, we would "graze", finger foods, dips,anti pasta...
However "grazing" tends to be expensive.
With my attempt to now plan "budget friendly gourmet" meals tonight I cooked.

BAKED FISH


1/4 c. bread crumbs
1 1/2 tbsp. lemon juice
1 1/2 tbsp. oil
4 fish fillets cod or haddock/ I bought two 1 1/4 lbs
Preheat oven to 450 degrees. Stir together crumbs,  lemon juice and oil. Set aside.
Spray baking dish with non-stick spray. Arrange fillets in baking dish. (Fold thin edges under to even out thickness of fish.) Spread crumb mixture evenly over fish. Bake 15-18 minutes or until done, when fish flakes easily.

Simple Simple and at 3.99 a pound with the addition of homemade slaw this is a healthy, yummy dinner for $10.00 a person.

COLD SLAW DRESSING

1 med. head cabbage
1 med. size carrot
4 tbsp. white sugar
4 tbsp. white vinegar
Salt & pepper to taste
3 tbsp. mayonnaise
1Tbsp Horse radish

Shred cabbage and carrot. Whisk sugar and vinegar. Then add mayonnaiseand horseradish. Mix well with whisk. Pour over shredded cabbage. Makes 6 servings
