My hens are happy, happy! You know how I can tell , 4 Big eggs a day. On a normal week four eggs a day would be perfect, except what is normal? On our farm normal looks like Lager and I each eating two eggs a day. This week I have been busy and have not made my morning two egg breakfast, and Lager was in Massachusetts two days with Daddy so no eggs for Lager. Add the bonus dozen that was in my garden share with fresh organic scallions, bacon ends from our recently harvested pig.Suddenly I have 28 eggs in the fridge, time to think and wallah Quiche.
